Quick and Easy Immune Supporting Vegetable and Beef Soup

I love soup. It is quick and easy to make, especially using a Crockpot. Homemade soup is a great way to fill your body with immune boosting nourishment with minimal prep work. Like smoothies, you can pack it full of vegetables to help you achieve the recommend 6-11 servings a day. I don't usually measure, so when I make soup I fill ½ to ⅓ of the pot with my favorite coarsely chopped vegetables. Bone broth and collagen protein can provide the building blocks help support a body that is recovering from illness. Grass Fed Bone broth is one of the healthy staples that I recommend keeping on hand this time of year. Tumeric and ginger can both help your body fight inflammation. Basil adds a non-traditional slightly spicy flavor to the soup. Thyme is a seasoning I often like to use when cooking meat. Thyme is also one of many herbs that may support wellness. Don't be afraid to experiment with spices when you cook. Young Living Culinary Vitality Essential oils give me the flexibility to experiment with quality herbs without having to keep my fridge stocked with them. While many people try to avoid salt, quality sea salt can be a good source of beneficial minerals including magnesium.

Here is the recipe for my Vegetable and Beef Soup

Place the following ingredients in a large crock pot:

  • 3-4 cups chopped organic green leafy vegetables (I used leeks, broccoli, and fennel in this recipe)

  • 1 lb Grass Fed ground beef (break it up with your hands before putting it into the pot)

  • 4 cartons Kettle & Fire Grass Fed Beef Bone Broth

  • 1 tsp ginger

  • 1 Tbsp Turmeric

  • 1 scoop grass fed collagen protein

  • Basil Vitality Essential Oil

  • Thyme Vitality Essential Oil (these oils are concentrated just one or two shakes will do)

  • Celtic Sea Salt to taste

Set Crock Pot on low and run for 6-8 hours or overnight
